 Shakshuka (Eggs in Tomato Sauce) Recipe


Ingredients


2 onions

1 red bell pepper

1 yellow bell pepper

1 yellow bell pepper

4 large tomatoes

6 sprigs parsley

8 sprigs cilantro

2 teaspoons cumin

2 teaspoons paprika

4 eggs

1 pinch cayenne pepper (optional)

1 sprig rosemary (optional)

salt

pepper

olive oil

(pimentão = bell pepper)




Preparation


Deseed the bell peppers and cut into pieces. Chop the onions and tomatoes.

In a large skillet, sauté the onions in olive oil.

When translucent, add the chopped bell peppers, chopped parsley, and half of the cilantro (also chopped). Cover and cook over medium heat for about 10 minutes.

Add the seasonings and stir. Add the tomatoes. Cook for another 20 minutes over medium heat. Add the 4 eggs (cracked). Remember to place them on each side of the pan. Cover and cook the eggs (the yolks should ideally be cooked through and still runny).

Finish with the remaining chopped cilantro. Serve while still hot. Enjoy!
