 Portuguese stew, as it should be


Ingredients


400g beef

1 pig's foot

Half a chicken

200g bacon (pork belly)

400g short ribs

200g smoked pork sausage

1 meat sausage

1 farinheira sausage

1 rice sausage

1 blood sausage

250g beans

4 carrots

1 turnip

1 red cabbage (sausage)

1 Portuguese cabbage (potatoes to taste)

Rice

Pig's ear and pork butt (optional)





Preparation


Wash and clean the meat thoroughly, season with salt, and let it sit for about 1 hour before cooking in the pressure cooker for about 20 minutes. Once cooked, break up the meat as desired and return it to the pot. Prepare the vegetables and bring to a boil in a large pot of salted water, along with the potatoes, red cabbage, kale, turnips, and carrots, for about 10 to 15 minutes. Five minutes before the end of the cooking time, add the meat sausage, farinheira sausage, black pudding, and blood sausage. Remove the sausages and slice them, then set aside.

Cook the beans in salted water in a pressure cooker for 10 minutes and keep warm.

Cook the rice with half of both cooking liquids for 10 minutes and keep warm.

Arrange the meats, vegetables, sausages, and beans in a serving platter. Serve hot and immediately with white rice.
