Magical Coconut Pudding
Ingredients
For the caramel:
70g sugar
a little water
For the pudding:
400g condensed milk
400ml coconut milk for cooking
70g shredded coconut
3 eggs
Prepare the caramel:
Place the sugar and a little water in a saucepan and bring to a boil over medium heat.
Let it cook until it turns into a caramel. Immediately pour it into the rectangular pan.
Beat the eggs and add the coconut milk. Mix. Add the condensed milk and mix everything together.
Grease the shredded coconut and mix.
Pour the mixture over the caramel.
Place the pan with the mixture on the oven rack and fill with boiling water (the rack, not the pan) to bake in a bain-marie.
Bake for 45 minutes at 180°C. Continue checking for doneness with a knife; when it comes out clean, the pudding is ready.
Let it cool before unmolding. And serve!
