Italian Carbonara Recipe
Ingredients
200g spaghetti
100g Pecorino cheese
4 slices pancetta (4 to 5 slices)
2 eggs
Preparation
Cook the spaghetti according to package instructions.
Grill the pancetta and cut it into small pieces.
Place the eggs, 80g Pecorino cheese, and 2 tablespoons of spaghetti cooking water in a bowl.
Whisk until the mixture rises slightly.
When the pasta is cooked, mix it with the pancetta and the eggs, cheese, and water.
Place on plates or in a serving dish.
Sprinkle with Pecorino cheese and you're done.
P.S. - This carbonara cannot be reheated, as it risks cooking the eggs and losing its creamy texture.
