Couscous, Spinach, and Tomato Recipe
Ingredients (serves 2)
: 1 cup couscous (Moroccan style)
1 cup hot water or vegetable broth
2 cups fresh spinach (washed and chopped)
1 medium tomato (diced)
1 clove garlic (minced)
1/2 small onion (minced)
2 tablespoons olive oil
Salt to taste
Black pepper to taste
Juice of half a lemon (optional)
1/4 cup grated Parmesan cheese or crumbled feta (optional)
Instructions
: Prepare the couscous: In a bowl, place the couscous and add the hot water or vegetable broth. Cover with a cloth or lid and let it rest for 5-7 minutes until the couscous absorbs the liquid. Fluff the grains with a fork and set aside. Sauté the vegetables: In a skillet, heat the oil over medium heat. Add the onion and sauté until translucent (about 2 minutes). Add the garlic and sauté for another minute.
Add the spinach and tomato: Add the spinach to the skillet and stir until it begins to wilt (about 2 minutes). Add the chopped tomato and cook for another 2-3 minutes, until the tomato softens slightly. Season with salt and pepper.
Stir in the couscous: Add the prepared couscous to the skillet with the vegetables. Mix well to combine the flavors. If desired, add lemon juice for a fresh touch.
Finish: Turn off the heat and, if using, stir in the Parmesan or feta cheese. Taste and adjust salt and pepper if necessary.
Serve: Serve warm or at room temperature as a main course or side dish. You can garnish with basil or parsley leaves, if desired.
Tips: You can add other ingredients, such as olives, nuts, or raisins, for more texture and flavor.
