Cheese Croquettes Recipe 


Ingredients


300g potatoes

50g cheese (raclette or other meltable cheese)

1 egg yolk

salt

black pepper

nutmeg

2 tablespoons flour

1 beaten egg

5 tablespoons breadcrumbs

oil for frying





Preparation


Peel and slice the potatoes. Place them in a pot of boiling, salted water until cooked through. Remove.


Mash them (like a purée) and add the salt, black pepper, nutmeg, and egg yolk. Mix well. Cut the cheese into squares.


The measurement for each croquette is one dessert spoon. Form a small ball, flatten it lightly, and place the square of cheese inside. Close the ball.


Dip in flour, then in the beaten egg, and finally in the breadcrumbs.


Fry the croquettes in a deep fryer for about 5 minutes, or until golden brown. Alternatively, use a pan of hot oil, but don't forget to flip them.
