 Bean Soup with Meat and Elbow Noodles Recipe


Ingredients


400g of Brazilian beans

800g of cooked pork sausage

1 cooked beef sausage

1 cooked farinheira sausage

1 head of kombu seaweed

1 bay leaf

150g of elbow noodles

1 large onion, chopped

2 cloves of garlic

2 carrots, cut into small cubes

Mint to taste

Salt

Pepper




Preparation


1) Cook 800g of pork sausage, 400g of Brazilian beans soaked overnight, 1 bay leaf, 1 farinheira sausage, 1 beef sausage, and 1 head of kombu seaweed in plenty of water for 1 hour and 30 minutes.

2) Cut the meat and sausages and reserve the cooking water and the beans. 3) In a saucepan, sauté 1 chopped onion in a dash of olive oil with a pinch of salt and 2 cloves of minced garlic.

4) When the onion is translucent, add half of the cooked beans and mash.

5) Add the sliced ​​chorizo, the chispe, the broth, and the remaining beans.

6) Add 2 diced carrots and, when boiling, add 150g of elbow pasta. Add more broth if necessary.

7) Cook for 15 minutes.

8) Finish with the sliced ​​farofa and garnish with fresh mint.
