4 medium potatoes (preferably Asterix or Russet, ideal for frying)
150g bacon, diced or stripped
200g mayonnaise (homemade or store-bought)

Extra seasonings (optional): paprika, garlic powder, or fresh herbs (such as parsley or chives)
Instructions:
Preparing the potatoes: Peel the potatoes (or leave them on for a rustic style) and cut into sticks or any shape you prefer. Place the pieces in a bowl of cold water for 15-30 minutes to remove excess starch (this makes the potatoes crispier).
Drain and pat dry with a clean cloth or paper towel.
Fry the potatoes:
