500g ground beef (rump or rump)
1 medium onion, chopped
2 cloves garlic, crushed
2 cans peeled tomatoes (or 500g tomato sauce)
2 tablespoons tomato paste
1 grated carrot (optional, to tone down the acidity)
1/2 cup dry red wine (optional)
2 tablespoons olive oil
1 bay leaf (optional)
Salt and black pepper to taste
1 pinch of sugar (if needed)
Fresh basil or oregano to taste
Grated Parmesan cheese, for serving
Preparation:
Cook the pasta: Bring salted water to a boil in a large pot. Cook the pasta according to package directions until al dente. Drain and set aside.
Prepare the Bolognese sauce: In a large saucepan, heat the olive oil and sautΓ© the onion until translucent (about 3 minutes).
Add the garlic and sautΓ© for another minute.
Add the ground beef and cook, stirring, until it changes color (about 5-7 minutes). Season with salt and pepper.
(Optional) Add the red wine and let it evaporate for 2 minutes.
Add the grated carrot (if using) and tomato paste and mix well.
Add the peeled tomatoes (mash them with your hands or use a blender to lightly puree) and the bay leaf. Mix.
Adjust the flavor with salt, pepper, and, if the sauce is too acidic, a pinch of sugar.
Simmer over low heat for 20-30 minutes, stirring occasionally, until the sauce thickens.
Assembly
