Ingredients


2 cups all-purpose flour

1 cup sugar (adjust to taste)

3 eggs

1/2 cup vegetable oil or 100g melted butter

1/2 cup milk

1 tablespoon baking powder

1 teaspoon vanilla extract (optional)

1 cup candied or dried fruit (such as raisins, apricots, prunes, or cranberries)

1/2 cup chopped walnuts or chestnuts (optional)

1 pinch of salt

1 teaspoon ground cinnamon (optional, for a special touch)





Instructions


Preheat oven: Set the oven to 180°C (350°F) and grease and flour a loaf pan or round cake pan, or use parchment paper. Prepare the fruit: If using dried fruit, soak it in warm water for 10 minutes to hydrate, then drain well. Toss the fruit and nuts (if using) with a tablespoon of flour to prevent them from sinking into the batter.

Beat the wet ingredients: In a large bowl, beat the eggs with the sugar until light and fluffy. Add the oil (or butter), milk, and vanilla extract, mixing well.

Add the dry ingredients: Sift the flour, baking powder, salt, and cinnamon (if using) into the wet mixture. Gently mix with a spatula or whisk until the batter is smooth.

Add the fruit: Fold the candied/dried fruit and nuts into the batter, stirring gently.

Bake: Pour the batter into the prepared pan and bake for about 40-50 minutes, or until a toothpick inserted in the center comes out clean.

Finish: Let the cake cool for 10 minutes in the pan, then unmold and let cool completely. If desired, sprinkle powdered sugar on top for decoration.
