Delicious Fava Bean Soup with Bacon ππ·
Ingredients
(Serves 4)
: 500g fresh fava beans (or frozen, peeled)
150g bacon, diced or stripped
1 medium onion, chopped
2 cloves garlic, minced
2 medium potatoes, diced
1 carrot, sliced
1 liter chicken broth or water
2 tablespoons olive oil
Salt and pepper to taste
Cilantro or parsley leaves (optional, for garnish)
Instructions:
Preparing the fava beans: If using fresh fava beans, peel them and remove the outer skin if they are tough. If using frozen fava beans, thaw them first or use directly.
Fry the bacon: In a large saucepan, heat 1 tablespoon of olive oil over medium heat. Add the bacon and fry until crispy. Remove the bacon and set aside, leaving the fat in the pan. SautΓ© the vegetables: In the same pan, add the onion and garlic. SautΓ© for 3-4 minutes until softened. If necessary, add 1 more tablespoon of olive oil.
Cooking the soup base: Add the potatoes, carrots, and fava beans. Mix well. Add the chicken broth (or water) and season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, until the vegetables are tender.
Puree (optional): For a creamy soup, use a blender or blender to partially or completely puree the soup. If you prefer a more rustic texture, leave it as is.
Finish: Return the fried bacon to the pan and stir. Adjust the salt and pepper. If desired, add chopped cilantro or parsley for a fresh touch.
Serve: Serve hot, accompanied by rustic bread or toast.
