Delicious Carrot and Cinnamon Cake Recipe π₯ππ
Ingredients
For the cake:
3 medium carrots (about 250g), peeled and chopped
3 eggs
1 cup vegetable oil
2 cups sugar
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1 pinch of salt
For the topping (optional):
1 cup confectioner's sugar
2 tablespoons lemon juice or milk
1/2 teaspoon ground cinnamon (optional, for sprinkling)
Instructions
Preheat the oven: Set the oven to 180°C (350°F) and grease a 22cm round or medium rectangular pan with oil and flour.
Blend the wet ingredients: In a blender, combine the chopped carrots, eggs, and oil. Blend until smooth.
Mix the dry ingredients: In a large bowl, sift the flour, sugar, ground cinnamon, and salt. Add the baking powder last, without sifting.
Combine the ingredients: Pour the mixture from the blender into the bowl with the dry ingredients and stir gently with a spatula or whisk until everything is incorporated.
Bake: Pour the batter into the greased pan and bake for about 35-45 minutes, or until a toothpick inserted in the center comes out clean.
Frosting (optional): Mix the powdered sugar with lemon juice or milk until it forms a glaze. Spread over the cooled cake and, if desired, sprinkle with ground cinnamon.
Serve: Let the cake cool before cutting. Serve with tea or coffee!
