Ingredients


For the cake:


1 medium ripe avocado (about 200g of pulp)

2 eggs

1/2 cup vegetable oil

1 cup sugar (or brown sugar for a richer flavor)

1 and 1/2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon vanilla extract (optional)

1 pinch salt

Juice of 1/2 lemon (to enhance the flavor and prevent the avocado from oxidizing)





For the topping:

1/2 cup powdered sugar

1 tablespoon lemon juice

Thin avocado slices or lemon zest for garnish (optional)


Instructions


Preheat the oven: Set the oven to 180°C (350°F) and grease a round cake pan. 8-inch (20 cm) loaf pan (or loaf pan) with oil and flour.

Prepare the avocado: Remove the flesh from the ripe avocado, mash with a fork, or blend in a blender until smooth. Add lemon juice to prevent browning.

Blend the wet ingredients: In a blender or bowl, combine the avocado flesh, eggs, oil, and vanilla extract (if using). Blend or stir until smooth.

Mix the dry ingredients: In a bowl, sift the flour, sugar, and salt. Add the baking powder last, without sifting.

Combine the mixtures: Pour the avocado mixture into the dry ingredients and gently stir with a spatula or whisk until smooth.

Bake: Transfer the batter to the greased pan and bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean.

Frosting (optional): Mix the powdered sugar and lemon juice until a glaze forms. Spread over the cooled cake. Decorate. Garnish with avocado slices or lemon zest, if desired.


Serve: Let the cake cool before slicing. Serve with coffee or fresh juice!
