Ingredients
(Serves 4-6)
: 500g ground beef (rump or rump)
1 medium onion, chopped
2 cloves garlic, chopped
1 red or green pepper, chopped (optional)
1 can (400g) peeled tomatoes or 4 chopped fresh tomatoes
1 can (400g) red or black beans (drained)
200ml beef broth or water
2 tablespoons tomato paste
1 teaspoon ground cumin
1 teaspoon paprika (sweet or spicy, to taste)
1 teaspoon chili powder (adjust according to your spice tolerance)
1 pinch oregano
Salt and black pepper to taste
2 tablespoons olive oil or cooking oil
Optional: Fresh cilantro or chives for garnish
Optional: 1 can corn (drained)
Preparation
SautΓ© the aromatics: In a large saucepan, heat the olive oil over medium heat. Add the onion and sautΓ© until translucent (about 3 minutes). Add the garlic and paprika (if using) and sautΓ© for another 2 minutes.
Brown the meat: Add the ground beef and cook, stirring to break up any lumps, until well browned (about 5-7 minutes). Season with salt and black pepper.
Add spices and tomatoes: Combine cumin, paprika, chili powder, and oregano. Mix well. Add the tomato paste, peeled tomatoes (mash them with a spoon), and beef broth or water. Stir to combine.
Add the beans: Add the beans (and corn, if using). Mix well and bring to a boil.
Simmer: Reduce the heat, cover the pan, and simmer for 20-30 minutes, stirring occasionally. If necessary, add more broth or water to adjust the consistency. Taste and adjust salt and seasoning.
Serve: Garnish with cilantro or green onions, if desired. Serve hot with sides such as rice, nachos, sour cream, shredded cheese, or sliced avocado.
