Ingredients


: 500g fresh fava beans (or frozen, if not in season)

200g chorizo (preferably Portuguese, Alentejo or meat type)

1 medium onion, chopped

2 cloves garlic, chopped

2 ripe tomatoes, chopped (or 200g canned peeled tomatoes)

1 bay leaf

100ml white wine (optional, but adds a special touch)

2 tablespoons olive oil

Salt and pepper to taste

1 sprig fresh cilantro, chopped (or parsley, if preferred)

Water (if necessary, for cooking)






Preparation


: Prepare the fava beans: If using fresh fava beans, peel them and remove the outer skin (if they are large and the skin is tough). If using frozen fava beans, thaw them first or rinse them in hot water. Cooking the chorizo: Cut the chorizo into slices or small pieces. In a large saucepan, heat the olive oil over medium heat and fry the chorizo until it releases its fat and becomes slightly crispy (about 3-4 minutes). Remove the chorizo and set aside.

SautΓ© the base: In the same pan, with the chorizo fat and olive oil, sautΓ© the onion and garlic until translucent (about 5 minutes). Add the bay leaf and chopped tomato, cooking for another 5 minutes, until the tomato begins to break down.

Add the broad beans: Add the broad beans to the pan and stir well to coat. If using white wine, add it now and let the alcohol evaporate (1-2 minutes).

Cooking: Cover the broad beans with water (just enough to cover them) and season with salt and pepper. Cook over medium-low heat for 15-20 minutes (or until the beans are tender but not falling apart). If necessary, add more water gradually.

Finish: Add the chorizo back to the pan, stir, and cook for another 5 minutes to infuse the flavors. Taste and adjust the salt if necessary. Before serving, sprinkle with chopped fresh cilantro.
