Simple and fluffy peach cake ππ
π Ingredients
3 fresh peaches or peaches in syrup (sliced)
200 g of wheat flour with yeast
200 g of sugar
150 g of melted butter
4 eggs (whites and yolks separated)
Juice and zest of 2 lemons
1 teaspoon of baking soda
π¨π³ Preparation
Beat the egg yolks with the sugar until it forms a light cream.
Add the sifted flour, baking soda, lemon juice and zest. Mix well.
Incorporate the melted butter.
Beat the egg whites until stiff and gently add to the dough.
Line the bottom of a 20–25 cm (8–10 in) tin with baking paper and arrange the sliced peaches on top.
Pour the batter on top and bake in a preheated oven at 180°C for 35–45 minutes.
Leave to cool for 10 minutes, then unmold and serve!
