Recipe: Pumpkin soup π
π₯£ Ingredients
1/2 small pumpkin (peeled and cut into cubes)
1 medium potato (peeled and cut into cubes)
1/2 chopped onion
1 crushed garlic clove
1 liter of water (or more, if necessary)
1 vegetable stock cube
Chopped green onions to taste
Salt (only if necessary)
White cheese cubes and toast to serve (optional, but delicious!)
π¨π³ Preparation
In a large pan, brown the garlic in a dash of oil and add the onion.
Add the pumpkin and potato, stirring well.
Pour in the water and, when it boils, add the vegetable stock cube.
Cook with the pan covered until the pumpkin and potato are very soft.
Turn off the heat and let it cool a little.
Blend everything in a blender until you get a smooth cream.
Return to the pan, heat for another 3 minutes, add the chives and adjust the salt.
Serve hot, with the cheese cubes and crispy toast on top.
