Oven-Baked Pork Leg Recipe πŸ–πŸ˜Š


Ingredients (for 6-8 people):


1 pork leg (about 3-4 kg)


6 garlic cloves


2 tablespoons of paprika paste (or sweet paprika)


1 tablespoon of paprika


1 teaspoon of black pepper


2 bay leaves


200 ml of white wine


100 ml of olive oil


Coarse salt to taste


1 kg of small potatoes (to accompany)


2 onions (optional)


Rosemary or thyme (optional)





Preparation:


Season the meat:


The day before, make cuts in the skin of the pork leg with a sharp knife (in a diamond shape, without cutting deeply into the meat).


Crush the garlic with coarse salt, mix with the paprika paste, paprika, pepper, crumbled bay leaves, olive oil and half of the white wine. Brush the entire leg with this marinade, rubbing it well into the cuts. Cover and leave to marinate in the refrigerator for 12-24 hours.


Preparing to roast:


Remove the leg from the refrigerator 1 hour before cooking to allow it to come to room temperature.


Preheat the oven to 180ΒΊC.


Place the leg in a large baking dish, skin side up. Pour over the remaining white wine and a little of the marinade.


Roasting:


Bake in the oven for about 3-3.5 hours, basting occasionally with the sauce from the dish. If the skin starts to burn, cover with aluminum foil.


Halfway through (about 1.5 hours), add the potatoes (washed, with or without skin, cut in half if they are large) and the onions cut into quarters to the baking dish, covering them with the sauce. Season with salt and, if desired, rosemary or thyme.


Finish:


For crispy skin, increase the oven temperature to 200-220ΒΊC for the last 15-20 minutes (remove the foil, if used).


Check if the meat is cooked: it should be tender and falling away from the bone. Leave it for longer if necessary.


Serve:

Let the leg rest for 10 minutes before slicing. Serve with the roast potatoes, drizzled with the sauce from the tray, and a green salad or sautΓ©ed vegetables.


Tip: Accompany with a good red or dry white wine, as you prefer.
