Here is a delicious recipe for fish rice with tomato
Ingredients:
600g of fish (hake, sea bass, snapper, etc.)
350g of rice
5dl of olive oil
1 onion
3 cloves of garlic
1 bay leaf
1 bunch of coriander
1 small can of peeled tomatoes
Salt and pepper to taste
Preparation:
Cook the fish in salted water. Remove it, strain the broth through a sieve and set aside. Let the fish cool and remove the skin and bones.
In a pan, heat the olive oil and sauté the chopped onion and garlic until they wilt.
Add the tomato and pepper, letting it cook for about 5 minutes.
Add the reserved broth, chopped coriander and bay leaf. Let it boil well.
Add the rice, stir and cook for about 15 minutes.
Finally, add the fish, adjust the amount of broth, remove from the heat and serve.
