Focaccia Recipe


Ingredients for the dough


1 tablespoon of dry yeast


280 ml of warm water (heat in the microwave for 15 seconds)


3 tablespoons of refined sugar


500 grams of wheat flour


1/2 cup of olive oil


1 tablespoon of refined salt


1 teaspoon of fleur de sel (or coarsely crushed rock salt)


Ingredients for the toppings


Olive oil to taste


Cherry tomatoes to taste


Fresh herbs to taste


Onion cut into half-moons


Cheese to taste


Cold cut meats





Preparation method


The water cannot be hot or cold, as there is a risk of spoiling the yeast. It must be lukewarm. With all the ingredients in hand, let's prepare the focaccia;


In a bowl, place the yeast, warm water, refined sugar and 1/3 cup of wheat flour. Mix the ingredients well and let it rest for 15 minutes;


Add the olive oil, salt and, little by little, add the rest of the wheat flour. Mix gently, just to incorporate the ingredients;


With your hands, without kneading, mix until you get a sticky and moist dough. If necessary, add a little more water;


Cover with a dry cloth and let it rest for 30 minutes, or until it doubles in size. If the weather is cold, place it in a warm place;


When the dough has doubled in size, place it in a rectangular baking dish (35 x 27 cm) greased with plenty of olive oil;


With your fingertips greased with olive oil or wet, spread the dough making small pockets, as if they were holes, but without piercing it;


On top of the dough, place cherry tomatoes, onion, fresh herbs, cheeses and sausages of your choice. Drizzle the entire surface with olive oil again;


Bake in a preheated oven at 200 ºC for about 30 minutes, or until the dough is golden;

Focaccia is ready! It's ready to serve.
