In a pan, place the sugar and cook over low heat until it melts and forms a golden caramel.
Add the sliced bananas, little by little, stirring after each addition. It is important to add them little by little so that the caramel does not harden. Let it cook for just 1 minute and remove from the heat. Transfer to a bowl to cool and set aside.
For the cream
In a blender, place the caramelized banana jam (¼ cup), milk, sugar, cream and cornstarch. Blend very well for about 2 minutes.
Pour this mixture into a pan and cook over low heat, stirring constantly, until it boils and thickens. Let it cook for another 3 minutes and remove from the heat.
To assemble
In a baking dish, place a layer of cream, a layer of cornstarch cookies, and half of the banana jam.
Cover with another layer of cornstarch cookies, cream again, another layer of cookies and place the remaining banana jam on top.
Finish with the remaining cream, spread well to make it even and sprinkle the 50% cocoa chocolate over the entire surface.
Refrigerate for about 4-6 hours until it is very cold and the cookies are very soft.
Remove from the refrigerator and serve this wonderful banana dessert!
