 Vegetarian Meatball Bowl with Greek Salad Recipe


Ingredients


chickpeas style 0% meat burger mix

1 pack (200g)

cucumber

150 g (1 unit)

tomato with stem

160 g (2 units)

mini bell pepper

20 g (1 unit)

red onion

100 g (1 unit)

fresh mint

1 tbsp

pitted black olives

1 unit (8 units)

extra virgin olive oil

3 tbsp

red wine vinegar

1 tbsp

salt

1 pack

hummus

1 unit (180g)

paprika

1 tbsp

natural soy yogurt

1 unit

lemon juice

1 unit

garlic

1 clove

fresh mint

1 tbsp. of soup

salt

1 kg

pepper

1 tbsp





Preparation


Step 1

Cook the burger mixture according to the instructions on the package and make balls.

Step 2

Bake for 12 minutes.

Step 3

For the salad, remove part of the cucumber skin and cut into cubes, as well as the tomato and pepper. Peel the onion and cut into slices.

Step 4

Combine all the vegetables in a bowl, add the chopped mint, the olives and season with two tablespoons of olive oil, the vinegar and salt. Mix.

Step 5

Prepare the yogurt sauce: in a bowl, mix the yogurt with the lemon juice, the crushed garlic, the chopped mint and season with salt and pepper to taste. Mix well.

Step 6

Serve the balls with the salad, the hummus and the yogurt sauce. To finish, drizzle the hummus with the remaining olive oil and sprinkle with paprika.
