 Pasta Alla Norma Recipe


Ingredients


2 packets of GARDEN GOURMET Marinated Strips


400 g spaghetti

1 eggplant

2 cloves of garlic

1 can of diced tomatoes

2 tablespoons of capers

2 teaspoons of dried oregano

fresh basil

olive oil





Preparation


PREPARING THE EGGPLANTS AND MAKING THE TOMATO SAUCE

Cut the eggplant into 2 cm cubes, place in a colander, sprinkle with salt and let stand for 10 minutes. Fry the garlic with a little olive oil and add the chopped tomatoes. Bring to the boil and cook for about 10 minutes until you get a thick sauce.

COOKING THE PASTA AND EGGPLANT

Boil some water and cook the spaghetti. Wash the eggplant, dry and cook with a little olive oil. Sprinkle with oregano. Cook the capers and half of the basil (roughly chopped).

FRY THE MARINATED STRIPS

Fry the GARDEN GOURMET Marinated Strips according to the instructions on the package. Drain the water from the spaghetti and save it for later use.

GARNIZING AND SERVING

Pour the sauce with the Marinated Strips over the pasta and serve. Garnish with the remaining fresh basil. You can add cheese if desired.
