 Scrambled Eggs with Cod


Ingredients


196 ml evaporated milk

400 g of desalted and shredded cod

200 g onion

6 eggs

1 clove of garlic

4 c. of olive oil soup

salt to taste

ground black pepper to taste





Preparation


Peel and chop the garlic and onion. Heat 2 tablespoons of olive oil in a skillet and cook over medium heat for about 10 minutes, stirring occasionally.

Add the cod and cook for 5-6 minutes, stirring until all the water has evaporated.

Remove the cod and drain if necessary. In the same frying pan with 2 tablespoons of hot oil, add the cod again. Sauté over high heat for about 2 minutes and add the scrambled eggs mixed with the evaporated milk.

Cook over medium-high heat for 2-3 minutes, stirring continuously, and season to taste with salt and pepper.
