Roasted Rooster with Oranges
Ingredients
1 rooster
250 ml of white Port wine
2 oranges
1 dl of olive oil
1 onion
2 cloves of garlic
salt to taste
pepper to taste
Preparation
Start by seasoning the rooster the day before with salt and freshly ground pepper. Rub the entire rooster inside and out and place the bird in a large container. Add the peeled garlic, an orange sliced with the peel, the juice of the other orange and the port wine. Let it marinate overnight.
Then, remove the rooster and strain the marinade. Place the rooster on a tray on a bed of onion slices and drizzle with the marinade and olive oil.
Bake in a preheated oven at 180ºC to roast for about 1h45m. During cooking, baste the duck with the sauce that forms.
Serve the roasted rooster with chestnuts.
