Ingredients
1 lobster (ours was frozen)
5 chopped parsley sprigs
5 chopped chive sprigs
1 clove of crushed garlic
1 pinch of salt
4 (to 5) col. of olive oil soup
zest of 1/2 grated organic lemon
Preparation
Preheat the oven to 180°C. Meanwhile, in a bowl, mix the olive oil with the chopped parsley, chopped chives, crushed garlic clove, lemon zest and salt. Mix well to combine all ingredients. Book.
Place the lobster on a cutting board with the belly facing up. Using a sharp knife, cut it in half lengthwise.
Clean the lobster using a teaspoon to carefully remove the digestive organ (the green part, also called coral or tomalley), being careful not to damage the meat.
Quickly rinse the lobster under cold water to remove any residue. Dry the inside with paper towel and place the lobster in a refractory dish (pyrex).
Season the lobster with the previously prepared mixture, distributing it evenly over each part.
Bake for 10 minutes at 180°C.
The baked lobster with parsley and lemon is ready!
