Easter special: cod with cream
Ingredients
2 Onions
600 g cod
1 kg of potatoes cut into cubes
Oil
500 ml of milk
2 tablespoons cornstarch
2 tablespoons of margarine
3 egg yolks
3 egg whites
2 boxes of cream
Salt
Black pepper
Preparation
Soak the cod. That is, place it in a bowl of water for 24 hours. Change the water 6 times during this period.
Cook the cod for approximately 10 minutes, without boiling. After draining the water, stir with a wooden spoon until it is completely shredded.
Meanwhile, in another pan, mix the milk with the cornstarch, stirring very well. Bring to the boil. When it is warm, add the egg yolks and margarine, each in turn.
Add the beaten egg whites and cream. Stir well until the cream thickens. Turn off the heat and season with salt and pepper. The cream will be ready.
Now while you fry the potatoes. In another pan, sauté the onions with the olive oil. Mix the shredded cod with the sautéed onions. Place it in a baking dish.
Bake in the oven until golden brown. Serve very hot.
