 Baked Turkey Thigh Recipe


Ingredients


2 kg turkey leg

oil

pepper paste

peppercorns

port wine

white wine

salt

garlic

onion

parsley





Preparation



Ask the butcher to give the turkey leg a few cuts (this one weighed about 2kg) so that it is easier to cook.

Place it in a bowl covered with water and add:

* 2 oranges, sliced

* 1 lemon, sliced

* black peppercorns

* 6 cloves of minced garlic

* salt to taste

* 3 bay leaves

* 1 glass of port wine

Leave to marinate for at least 24 hours.

At the bottom of the baking dish, place a layer of sliced ​​onion and sprigs of parsley. Drizzle with a little olive oil and place the turkey leg on top. On top of the meat, place another layer of onion slices and a few more sprigs of parsley.

Dissolve a tablespoon of paprika paste in 2dl of white wine and pour over the meat, then season with nutmeg and a drizzle of olive oil.

Bake in the oven at 180º for 1.5 hours, turning the meat from time to time so that it browns evenly on both sides, basting with a little of the marinade liquid whenever necessary.

About 10 minutes before the end of the cooking time, place orange slices in the cuts of the meat and let it finish cooking.

Serve with accompaniments of your choice.
