 Spanish Garlic Soup


Ingredients


1 tablespoon olive oil

2 or 3 cloves of garlic (depending on the size)

1/3 of a loaf of day-old bread

1/2 teaspoon paprika

500 ml hot water

salt to taste

1 egg





Preparation


In a pan, heat the olive oil over medium heat.

Once hot, add the whole cloves of garlic and sauté.


When the garlic starts to release its aroma, add the bread, cut into pieces.

Mix until the bread is soaked in olive oil.

Now add the paprika and mix again.


Quickly add the hot water and salt to taste. Do not let the paprika burn because if it goes on for more than 1 minute it will become bitter.


Let it boil for 15 minutes.

Taste the water to check the seasoning and if it has a garlic flavor. If not, let it boil a little longer.


Then, turn off the heat and add the egg (broken without the shell).


Stir until the yolk breaks and mixes well with the soup.


Leave it on the heat for another 2 minutes and turn it off.


Serve directly into bowls.


You can add parsley to decorate and eat with croutons.
