 Salmon with ginger and flaxseed crust on a bed of pineapple


INGREDIENTS


3 salmon fillets


3 slices of pineapple


q.s. fresh grated ginger


q.s. lemon


q.s. sea salt


q.s. pink pepper


For the crust


2 to 3 tablespoons of golden or brown flaxseed or sesame seeds


1 dessert spoon of extra virgin olive oil


2 tablespoons of grated ginger





PREPARATION


Mix the seeds, garlic, grated ginger, pepper and olive oil in a small bowl. Then, place the mixture on the salmon fillets, which have been previously seasoned with a little salt and pepper.


Place the fillets on a bed of thin pineapple slices.


Bake the fish in a preheated oven at 180 °C for about 15 minutes or until the salmon is cooked.


Serve with this delicious wild spinach salad.
