 Broad beans with ranchero eggs


INGREDIENTS


400g of frozen or fresh broad beans

1 onion

1/2 zucchini

200 ml of tomato pulp

4 eggs for poaching

200 ml of water

to taste Pepper

to taste Coriander or parsley

to taste Extra Virgin Olive Oil

to taste Salt

to taste Pepper





PREPARATION METHOD


In a frying pan, add the olive oil and the chopped onion, add the diced peppers and sauté well.


Add the broad beans and stir to combine.


Add the tomato pulp, water and zucchini. Season with a pinch of salt and pepper and cook for 2 to 3 minutes.


Add the eggs for poaching and finish with chopped coriander or parsley.
