 Vegan rice pudding


Ingredients


Carolino rice

150 g

water

275 ml

vegetable oat drink

700 ml

lemon peel

3 strips

cinnamon stick

2 units

sugar

100 g

turmeric

1 tsp

cinnamon powder

1 tbsp

fresh mint

1 tbsp





Preparation


Step 1

In a saucepan, place the rice with the water and cook for about 14 minutes.

Step 2

In another saucepan, place the vegetable oat drink, lemon peel, cinnamon sticks, sugar and turmeric. Cook over low heat and let it boil for about 8 minutes.

Step 3

When the rice is cooked, strain the drink mixture over the rice and let it cook for another 2 minutes, stirring constantly.

Step 4

Remove from heat and serve in bowls or on a large platter. Sprinkle with cinnamon and garnish with mint. Serve hot or cold.
