Shrimp Patties
With the right recipe, making shrimp burgers can only result in a delicacy. Become an expert in these appetizers, which can serve as a starter or side dish.
Ingredients
For the rissole dough:
500 ml of water
Salt to taste
60 g of butter
300 g flour
For the Filling:
40 g of flour
20 g of butter
250 ml shrimp broth
2 c. of tomato paste soup
Juice of ½ lemon
400 g of shrimp brains
2 c. of fresh coriander soup
Salt to taste
Pepper q.s.
To fry:
3 eggs
Breadcrumbs q.s.
Oil q.s.
Preparation
1.
For dough, place the water, salt and butter in a small saucepan and heat over medium heat. Once the butter has melted, add the flour all at once and stir well until the dough no longer sticks to the pan. Cover and reserve.

For the filling, place the butter in a pan and once it melts, add the flour and mix well. Add the broth little by little, stirring constantly.

Add the tomato pulp and lemon juice and mix. Add the shrimp brains, chopped coriander, salt and pepper and mix.
4.
Place the dough on a surface sprinkled with flour, work a little with your hands and then stretch it thinly with the help of a rolling pin.
5.
Place small spoonfuls of filling on the dough, fold and cut the burgers using a wide glass or cutter. Repeat until the dough and filling are finished.
6.
Dip each patty in egg, drain well and then coat in breadcrumbs. Fry the burgers in plenty of hot oil until golden. Remove excess oil with absorbent paper.
