Ingredients


shrimp shells and heads

320g

oil

2 c. of soup

garlic

2 tooth

carrot skin and tops

50 g

onion skins

20 g

celery stalks

80 g

green part of the leek

80 g

chilli pepper

1 pc.

water

1.5L





Preparation


Step 1

Boil the ingredients slowly and for a long time (1 to 2 hours) in water.

Step 2

If you want, you can also add strips of lemon peel.

Step 3

Using a slotted spoon, remove any foam that forms.

Step 4

Finally, strain the broth through a fine-mesh sieve.

Step 5

Freeze in properly labeled pots or trays.
