Sardine Fillets

Ingredients
6 sardine fillets
Lemon juice to taste
Salt to taste
Pepper to taste
Unleavened wheat flour to taste
2 beaten eggs
Breadcrumbs to taste
1 onion
3 garlic cloves
2 medium tomatoes
1/4 red pepper
Olive oil to taste
1 bay leaf
250 g Carolina rice
Preparation
Marinate the sardine fillets with lemon juice to taste, olive oil, salt and pepper.

Prepare a baking tray and place the cornbread slices on top.

Dip the marinated fillets in flour, beaten egg and breadcrumbs and arrange on top of the cornbread slices. Bake in the oven at 180ºC for 30 to 35 minutes until golden brown.

In the meantime, start preparing the tomato rice. Chop the onion and garlic and dice the tomato and red pepper.

In a pan, add a dash of olive oil and add the onion, garlic and bay leaf. Add the tomato and red pepper cubes and sauté for a few more minutes.

Add the rice, season with salt and pepper and fry briefly. Add the water and cook for 15 to 20 minutes.

Serve the sardine fillets immediately on the cornbread with the tomato rice.
