Salmon paste
Ingredients
leftover cooked salmon (or other fish)
100 g
leftover smoked salmon
50 g
shallot
½ unit
garlic
½ clove
chopped capers
1 tbsp
fresh chives
1 tbsp
fresh parsley
1 tbsp
lemon (juice)
½ unit
lemon (zest)
1 tsp
quark cheese
50 g
salt
1 tsp
pepper
1 tbsp
Preparation
Step 1
In a food processor, place the cooked fish, smoked salmon, peeled shallot and garlic, capers, chives (reserve a little) and chopped parsley.
Step 2
Drizzle with lemon juice and sprinkle with zest. Add the cheese and season with salt and pepper. Step 3
Blend until you obtain a smooth paste. Pour into jars and leave to set in the refrigerator. Before serving, sprinkle with pepper and chopped chives.
