Octopus rice with broth
Ingredients
2 onions
1 bay leaf
1 sprig of parsley
1.2 kg of fresh octopus
2 tbsp olive oil
200 g ripe tomato vine
½ green pepper
Ciri piri piri to taste
300 g Carolina rice
Salt to taste
Pepper to taste
2 tbsp chopped coriander
2 cloves of garlic
Preparation
1.
Bring a pan of water, 1 onion, bay leaf and parsley to the boil.

When it starts to boil, add the octopus and cook until tender.

Remove it and reserve the cooking water.
4.
Cut the octopus into pieces and set aside.
5.
Heat the olive oil with the chopped onion, let it brown,
add the diced tomatoes and peppers, bay leaves and
chili and let it sauté well.
6.
Add the rice and the octopus cooking broth, season with salt and pepper and let it cook for 12 minutes.
7.
After this time, add the octopus and mix well.
8.
Finish with the chopped parsley and coriander.
