 Mango Salad


Ingredients


1 green mango

1/2 red pepper

Ice water

4 pieces of fried tofu

Bean sprouts to taste

Radish sprouts to taste

1 bunch of coriander

1 bunch of basil

1 tablespoon of roasted peanuts

Sauce

1 shallot

2 cloves of garlic

Juice of 2 limes

1/2 chili pepper

2 teaspoons of coriander stalks

3 tablespoons of dark brown sugar

4 tablespoons of fish sauce

2 tablespoons of water




Preparation


1. Start by peeling 1 green mango, cutting it into slices and then into very thin strips.

2. Cut 1/2 red pepper also into thin slices and place in a bowl with ice.

3. Then, cut 4 pieces of fried tofu into quarters.

4. For the dressing, in a bowl, place 1 chopped shallot, 2 grated garlic cloves, juice of 2 limes, 1/2 chopped chilli, 2 tsp coriander stalks, 3 tbsp dark brown sugar, 4 tbsp fish sauce and 2 tbsp water. Mix.

5. To assemble the salad, place the mango in a bowl, then add the bean sprouts, pepper, tofu, radish sprouts, coriander and basil leaves and 1 tbsp roasted peanuts.

6. Season with 4 tbsp dressing, only when serving.
