 Chicken Meatballs


Chicken meatballs in tomato sauce are a complete and tasty dish, perfect for a family lunch or dinner. This recipe is easy to prepare and can be adapted to your taste.


Ingredients


Meatballs

400 g extra-thin chicken steaks

150 g grated carrot

2 c. coriander soup

Salt to taste

Pepper q.s.

100 g goat cheese

Tomato sauce

1 clove of garlic

1 medium onion

20 g olive oil

600 g tomato in pieces

Salt to taste

Black pepper q.b.

300 g tagliatelle

Grated parmesan cheese to taste




Preparation


1.

Start by preparing the meatballs. In a food processor, add the chicken and blend until the meat is ground. Then add the other ingredients, the grated carrot, goat cheese, salt, coriander and pepper and beat once again until you obtain a homogeneous mixture.

Using your hands, form small meatballs (or use an ice cream scoop) and arrange them on a baking tray covered with a sheet of baking paper.

Place in the oven, preheated to 180ºC, for around 15-20 minutes.

For the tomato sauce, start by putting a pan of water on the heat and as soon as it boils, add the whole tomatoes. Let it blanch lightly and remove the tomatoes. Now it's easier to peel the skin off the tomatoes and chop them.

Saute the onion and garlic clove in a pan with a drizzle of olive oil. Once the onion is sautéed, add the tomato cut into pieces, season with salt and pepper to taste and let it boil, once it boils, turn the stove to medium/low heat and let it cook for about 20 minutes, stir during this time.

In a pan of boiling water add the noodles and cook for about 10 minutes.


7.

Drain, and place the pasta in a baking dish, add the chicken meatballs and cover with the tomato sauce. Sprinkle some parmesan cheese.
