 Cauliflower and broccoli medallions


Ingredients


400 g of cauliflower

200 g of broccoli

1 tsp. salt

2 tsp. curry

75 g of cornstarch

2 eggs

olive oil (for roasting)



Preparation


Step 1 - Wash and cut the broccoli and cauliflower. Cook them in boiling water. They should be soft. Drain the water.


Step 2 - In a bowl, mash them well until they form a puree.


Step 3 - Add the eggs, cornstarch, salt, and curry and mix well.


Step 4 - Heat the olive oil in a frying pan over medium heat. Using a tablespoon, form the medallions. Cook them for about 2 minutes (each side). Note: They are not fried, but cooked with a little olive oil.


Step 5 - They are ready!
