Banana Muffins
Ingredients
2 medium bananas
280 g flour
120 ml milk
2 eggs
100 g sugar
4 tablespoons margarine
2 teaspoons baking powder
Preparation
1.
Preheat the oven to 180º
2.
Using a fork, mash the banana and set aside.
3.
Separate the egg yolks from the whites and beat the whites until stiff.
4.
Beat the egg yolks with the sugar until you get a whitish cream.
5.
Add the butter and continue beating. Add the milk alternating with the flour.
6.
Add the baking powder, mashed banana and beaten egg whites.
7.
Place in paper muffin cups, in a muffin tin and bake until golden.
