Sweet and sour cucumber, a quick and tasty side dish!
A great option to accompany meat or fish, this sweet and sour cucumber is, although it can also be enjoyed as an appetizer. Highly fragrant and refreshing, this recipe is perfect for hot days, easy to prepare and inexpensive.
Ingredients
500 g cucumber
1 clove garlic
5 mint stalks
180 ml white wine vinegar
45 ml water
20 g sugar
pink pepper (a pinch)
1 tablespoon salt (we used coarse salt)
Preparation
Step 1 - Wash the cucumbers and cut them into thin slices. Place them in a sieve.
Step 2 - Add salt on top and mix with your hands.
Step 3 - Then, place a weight on top of the cucumbers (we used a glass bowl) and leave them like that for at least 20 minutes so that the cucumbers release some of their water and bitterness.
Step 4 - Now rinse them under running water and remove excess moisture, drying them with a clean, dry towel or paper towels. Now place them in an airtight container.
Step 5 - In a pan, place the water, vinegar, pepper, garlic clove, sugar and mint.
Step 6 - Leave on medium heat and as soon as it starts to boil, cook for another 5 minutes.
Step 7 - Remove the garlic. Pour the rest into the cucumber jar. Let it cool to room temperature and cover. Store it in the refrigerator for at least 4 hours.
Step 8 - It's ready!
