 Portuguese Salad Recipe


Ingredients


1 large potato

2 eggs

1/3 cup fresh Minas cheese, or any other cheese of your choice, cut into squares

20 pitted black olives

2 hearts of palm cut into thick strips

10 cherry tomatoes (or 1 large tomato)

Chives

black pepper

salt

olive oil

vinegar.





Preparation


Peel and chop the potato. Cook in water until soft. Set aside. Cook the two eggs, chop and set aside.

Cut the tomatoes in half and start assembling the salad. Mix the potatoes, chopped eggs, tomatoes, olives, cheese and finally the hearts of palm. Season to taste. Decorate with basil leaves.
