Grouper Rice Recipe
Ingredients
1 onion
5 cloves of garlic
Olive oil
1 bay leaf
½ red pepper
2 peeled and seeded tomatoes
1 chilli pepper
½ bunch of parsley
White wine
Salt
11 cloves
Sweet paprika
2 grouper fillets
Vegetable stock
1 and a half cups of round rice
Preparation
1. Preparation: Start by chopping 1 onion and 5 cloves of garlic.
2. Add to a pan with olive oil. Chop ½ red pepper, 2 peeled and seeded tomatoes, the tip of 1 chilli pepper and ½ bunch of parsley.
3. As soon as the onion in the sauté starts to become transparent, add the tomatoes, then the red pepper, parsley and chilli pepper. Pour in white wine to taste and season with salt to taste.
4. Crush 11 cloves and add a good teaspoon of coffee and paprika to the pan. Cover the pan. As soon as it is sautéed, add the grouper seasoned with salt to taste and cover.
5. Then, turn the grouper over and add vegetable stock until covered. Cover again. Finally, uncover and adjust the seasoning, add 1 and a half cups of rice, a little more, twice as much rice, vegetable stock and cover again. As soon as it starts to boil, leave for 8 minutes, turn off the heat and keep covered for a few more minutes.
6. Finally, just plate and season with chopped parsley.
