 Carrot Cake with Walnuts Recipe


Ingredients


For the cake:

100 g butter

3 eggs

150 ml sunflower oil

2 teaspoons baking powder

1 teaspoon cinnamon

1 teaspoon vanilla essence

1 teaspoon salt

125 g brown / cane sugar

125 g white sugar

250 g carrots

250 g flour

100 g walnuts

For the cream:

100 g unsalted butter

200 g powdered sugar

300 g Philadelphia cream cheese





Preparation


Step 1 - Beat the 3 eggs.

Add each ingredient and beat in this order:

+ oil

+ melted butter (not hot)

+ vanilla essence

+ brown / cane sugar

+ white sugar

+ half the flour

Mix everything very well.

Step 2 - Add the rest of the flour + cinnamon + salt + yeast and mix until you get a smooth dough.

Step 3 - Crush the carrots and add to the cream. Mix with a spatula. Stir very well.

Step 4 - Finally, add the walnuts and mix again with the spatula.

Step 5 - Spread butter in two molds of the same size and pour the mixture. Bake for 30 minutes at 180ºC.

Step 6 - Meanwhile, prepare the cream.

Blend the butter vigorously. Add the powdered sugar. Mix until you get a cream.

Step 7 - Finally, add the cheese and mix until everything is smooth.

Leave it in the fridge for about 5 minutes. Time to do the next step.

Step 8 - Leave it to cool and unmold the cakes. Cut off the excess.

Step 9 - Spread the cream on top of one of the cakes.

Step 10 - Place the other one on top and decorate as desired.

Step 11 - Finally, sprinkle cinnamon on top and refrigerate for 10/15 minutes before serving.
