Roasted Pork Leg Recipe
Ingredients
1 pork leg
salt
garlic and pepper
1 grated onion
juice of 2 lemons
juice of 2 oranges
chopped parsley
2 tablespoons of butter
1 beef stock cube dissolved in ½ liter of water
Preparation
Place the meat in a bowl with enough water and salt to cover it and leave to soak for half an hour.
Once this is done, drain the water, dry the meat well and pierce it with the tip of a knife. Spread a paste made with plenty of seasoning, peppers, onion and a little salt over the entire surface.
Then sprinkle it with the lemon and orange juices, sprinkle the parsley and leave it to marinate for 12 hours.
Remove the meat from the marinade, brush it with butter and place it in a greased baking dish.
Strain the seasonings from the bowl, add the beef broth dissolved in boiling water and pour over the meat.
Wrap it in aluminum foil and bake in a medium oven. From time to time, lift the foil and pour the sauce from the baking dish over it.
Remove the foil and let it brown.
