Kiwi Tart Recipe
Ingredients
1 pastry shell
Pastry cream:
500 ml milk
4 egg yolks
125 g sugar
40 g cornstarch
1 vanilla bean
8 kiwis (medium size)
Preparation
Cover the pan (previously greased) with the pastry shell and make holes with a fork. Let it rest in the refrigerator for 30 minutes.
Pastry cream:
Bring the milk to the boil with the seeds of the vanilla bean (open the bean and scrape it out). Set aside. Meanwhile, in a bowl, place the egg yolks and add the sugar. Mix with a whisk until the mixture becomes light.
Add the cornstarch and mix again.
When the milk boils, gradually add it to the egg-sugar-cornstarch mixture. Then, place everything in the pan over medium heat.
Stir constantly with a wooden spoon until the mixture reaches the desired consistency. This step takes about 10 minutes. Then let it cool and cover with plastic wrap (to prevent the custard from drying out). Bake the shortcrust pastry in the oven for 20 minutes at 180°C.
Once the pastry and custard have cooled, pour the custard evenly over the pastry.
Remove the skin from the kiwis and cut into thin slices. Arrange them on top of the pastry cream.
And that's it! This tart is ready to be eaten.
