Delicious Potato, Bacon and Watercress Salad Recipe
Ingredients
1 kg of potatoes
200 g of bacon in pieces
100 g of watercress leaves
1 dessert spoon of grain mustard
2 tablespoons of red wine vinegar
8 tablespoons of olive oil
Preparation
Cut the potatoes in half, rinse them with water and cook them for about 15 minutes in boiling water seasoned with salt. While the potatoes are cooking, fry the bacon in a non-stick frying pan over high heat until it is crispy. Drain on absorbent paper.
In a bowl, mix the mustard with the vinegar, mix, season with a little salt and pepper and then add the olive oil in a drizzle, stirring constantly.
Drain the potatoes, place in a serving dish or salad bowl, add the watercress and bacon, pour the sauce over them, mix well and serve immediately.
