Delicious Portuguese Codfish Pataniscas


Ingredients


1000 g water

320 g soaked and shredded cod

120 g onion

1 clove garlic

5 g coriander or parsley (or to taste)

3 eggs

100 g plain flour

1 tablespoon olive oil

140 g milk

Salt to taste

Pepper to taste

Oil for frying





Preparation


1.

Pour the water into the cup. Place the soaked and shredded cod (drained) into the basket. Place the basket in the cup and cook for 15 minutes on the Steam function. Remove the basket, drain the cod and set aside. Discard the water.

Transfer the cod to the cup and set for 5 seconds on speed 4. Remove from the cup and set aside.

Without washing the bowl, add the chopped onion, garlic and coriander and press the Crush function once or twice. Use the spatula to scrape down the residue that has accumulated on the sides after each grinding cycle.

Beat the eggs in a separate bowl. Add the eggs, flour, olive oil and milk. Season with salt and pepper to taste and set the blender to speed 4 for 1 minute.

Add the cod, mix with the spatula until it reaches the bottom of the bowl and mix for 30 seconds at speed 3. Adjust the seasoning if necessary.


6.

Heat plenty of hot oil in a frying pan. When hot, add spoonfuls of batter and fry on both sides until the fritters are golden brown. Absorb the excess fat with absorbent paper.


7.

Serve the fritters with tomato rice or black-eyed pea salad.
