Delicious Mushroom Rice


Ingredients


1 drizzle of olive oil

1 chopped onion

3 chopped garlic cloves

400 g mixed mushrooms

250 g basmati rice

2 tbsp soy sauce

1 tbsp miso paste

Vegan sausage slices to taste





Preparation


1.

In a pan, sauté the chopped garlic and chopped onion in olive oil until tender. Add half of the sliced ​​mushrooms and cook until they lose their volume.

Add the rice, soy sauce and miso paste, mix well, add vegetable stock, bring to the boil, cover and cook until almost all the liquid is absorbed. Add the remaining sliced ​​mushrooms and mix.

Transfer the rice to a baking dish and spread slices of vegan sausage on top.


4.

Bake in a preheated oven at 190ºC for 25 minutes. Serve the mushroom rice immediately.
